I have a small obsession with the new Raspberry M & M's that are available just now. So much so that I decided to have a go at making a cookie with them in! If you can't get the new M & M flavour (my condolences, you don't know what you are missing) you could use orange or mint or just 100g of choc chips instead.
Ingredients
100g butter or margarine
75g soft brown sugar
175g self raising flour
60g M & M's
60g choc chip (white or milk it's up to you)
4 tbsp milk
Heat oven to 180 C/Gas mark 4/350 F
Beat the butter or marge until it's soft and creamy then add in the brown sugar, beat until mixed in.
Now add the rest of the ingredients and mix well, ensuring no lumps of flour are in the mixture. Be careful mixing in the flour, it's not a wet mixture so it can go everywhere!
Spoon the mix onto a baking sheet using a teaspoon (anything bigger doesn't cook well) making sure there are spaces for the cookies to expand and cook for between 15 - 17 minutes, depending on your oven. If they need a little longer just pop them back in.
Once cooked place on a cooling rack to firm up.
I got 15 cookies from this mix.
