Winter weather is soup weather in our house and being in the UK, at my parents, that means Granny's lentil soup. Easy to make, filling and can be vegetarian if you use vegetable stock, which can be a good thing to have up your sleeve if you have veggie friends or just want a change. It tastes even better the day after you make it so don't eat it all in one go!
Ingredients
4 large carrots, finely grated/sliced
1 large onion finely chopped
4 good handfuls of lentils, rinsed in cold water
2 small potatoes, peeled and diced
Ham or Veggie stock (1 - 2 litres)
Fry the onion in a large pan then add the carrot, lentils and stock. Add in the potatoes and bring to the boil.
Turn down and simmer for about 20 - 30 minutes or until everything is soft. Season with salt and pepper to taste.
Serve with crusty bread.
Batch Cooking
Make double the quantity and freeze this in portion size containers. Great for a quick lunch when you are tired of sandwiches!
