I love scones, I'm not fussy what type they are, plain, chocolate, fruit and my favourite cheese, I'll be happy with any of them if they are good! So here is a recipe for a new one, apple and cinnamon. Because of the cinnamon I think of these as being wintery, but they are equally tasty at any time of year!
Ingredients
2 cups of self raising flour, sifted (I used wholemeal)
30g butter (cut into chunks)
1/3 cup caster sugar
1 green apple, peeled and grated
1 teaspoon ground cinnamon
1 egg, beaten
1/3 cup milk
Preheat oven to 220
Place flour in a bowl add butter and rub in with finger tips till it looks like breadcrumbs.
Stir in sugar, apple and cinnamon, combine egg and milk. Make a well in the dry mixture and add in most of the egg and milk (save a little to wash over the top of the scones).
Mix to a soft dough and turn out onto work surface. Press or roll out to about 2cm thick.
Using a cutter, cut into rounds and place on a greased baking sheet.
Bake for 10- 12 minutes.
Cool and serve with butter and jam.
