Recipe 4/52 for 2014
We are staying in the UK at my parents house and my Mum said she was going to make soup for lunch, always one to get a new recipe under my belt I got the recipe from her. Soup is always easy to do and means you get your veggies for the day without even thinking about it. Will be making this one when it turns cooler back in Australia.
Ingredients
1 onion chopped
2 large or 3 small sweet potatoes
1/2 butternut pumpkin
1 tablespoon ground coriander
2 stock cubes (or stock of your choice)
Water
Fry the onion till is goes clear and soft then add in the coriander to soak up the flavour.
Add in the water, stock and veggies, bring to the boil then turn back and simmer until the sweet potato and pumpkin are soft (about 20 - 30 minutes).
Blend and serve with crusty bread.
