This is a Jamie Oliver Recipe from his 30 Minute Meals book, but we altered it a bit to make less than in the book. We have a recipe book that we write up our favourite recipes in and this has gone in to enjoy again. The fishcakes were pretty easy to russle up, but you do need a food processor to make it easy.
Ingredients (makes 4 fish cakes)
1 Salmon fillet
2 pieces of white fish (we use bassa but you could use haddock)
1 tuna steak
breadcrumbs
1 lemon
flat leaf parsley
1 clove of garlic
Sprinkle breadcrumbs on a plate and set to one side. Pop the fish in a food processor and add the zest of the lemon, chopped up parsley, salt and pepper and blitz until coarsely mixed.
Put the mixture in a bowl and add 2 spoons of breadcrumbs mix it all together with your hands and form into 4 patties.
Place the patties onto the plate with the breadcrumbs and sprinkle more breadcrumbs on top to coat.
Heat up your frying pan with a good glug of olive oil and the crushed garlic clove, place the patties in the pan and cook till golden on each side (about 7 minutes).
We enjoyed them with a salad but they would be equally tasty with rice or some sweet potato mash and veg.
