We try to have fish once a week for dinner, it's good for you, quick to cook and makes a change from having meat. This recipe is from Martha Stewart's website and it's a winner, so easy that my Dad makes it for himself, and he's not known for cooking from scratch.
Ingredients
2 salmon fillets
1/4 cup soft brown sugar
1/4 cup olive oil
2 tablespoons of lemon juice
3 tablespoon soy sauce
2 tablespoons of water (or white wine)
Make up the soy mix.
Place your salmon in an oven proof dish and pour the soy mix over it.
If you are in a hurry you can pop straight in the oven at 180 for 20 - 25 mins.
If you have a bit of time leave in the fridge for 1/2 hour to let the fish soak up the flavours then put int he oven to cook through.
Half way through cooking take out and brush the soy mix over the fish.
Serve with rice and steamed veggies for a healthy dinner.
