I'll need to do another recipe this week to play catch up from my trip home last week, I just couldn't squeeze one in in the last couple of days before we left!
My Mam made a version of this while we were home but I played about a little with it to make it my own. It looks a bit fancy (not that you can tell from this crapolla photo) but really takes NO EFFORT at all. Throw it all in an oven proof dish and Bobs your uncle.
Ingredients
3 chicken tenders/goujons per person (or however many you would eat)
1 - 2 leeks
punnet of mushrooms
White Sauce
Cheese
Trim up the chicken (I'm a bit fussy and cut bits off that I don't like the look of). Slice your mushrooms up and clean and chop your leeks. Make up a white sauce (melt butter in a pan, add a good spoon of plain flour, whisk in and cook for a minute then slowly add milk, stirring all the time till it thickens, add salt and pepper to taste).
Throw the chicken and veg in your dish, cover with the sauce and sprinkle some crated cheese on top.
Pop in oven for 30 - 35 mins at 180 and serve with rice or potatoes and some extra veg.
You could add in some bacon for an extra fancy meal, but really it doesn't need it. Never thought I would even think that, never mind put it in writing!
