Every year I make Rocky Road to give to my friends as part of their Christmas presents and every year I think I could probably just make a bigger batch and forget about any other gifts!
It's one of those things that everyone has a recipe for and really, just about anything goes. I make two different kinds, the milk chocolate one pictured and a white chocolate one. Try them, you friends and your taste buds will thank you...your waistline won't!
Milk Chocolate Rocky Road
1 bag milk chocolate melts
5 Scotch finger biscuits (or other shortbread type biscuit) broken up into smallish chunks
2 -3 Crunchie Bars broken up (2 is probably enough, but if you are feeling greedy go for 3!)
1/2 bag of mini marshmallows (if you can only get the big ones chop them up to smaller pieces)
Get the tin you want to let the mix set in and line with greaseproof paper, set aside.
Break up the biscuits and Crunchie and set aside. (put in a food bag and bash with a rolling pin - great to work those frustrations out!)
In a heat proof bowl melt the chocolate over boiling water in a pan (don't let the water touch the bowl, it ruins the chocolate).
Once the chocolate has melted remove from the heat and add the biscuit, Crunchie and marshmallows. Mix well and pour into the prepared tin.
Leave to cool a little, then place in fridge to harden
Remove from fridge once hard and cut into chunks with a sharp knife.
Variations
Use a bag of white chocolate melts and substitute the Crunchie for Turkish Delight (the proper stuff without the chocolate on it). Chop the Turkish Delight into smaller pieces and follow the same instructions as above.
For milk chocolate you could swap the Crunchie for M & M's or Malteasers or you could add peanuts in for a salty hit.
