We try to have fish once a week for a main meal and I needed something new for our recipe stash. After a quick scout round the internet I saw this recipe and thought I have to give it a go. Not sure what appealed as on paper it doesn't look great. Pastry, pesto, salmon and tomato is not a combination I would normally go for, but like some of the best adventures undertaken it was worth it!
This is a meal that will impress any guest you serve it too and is so simple to make.
Ingredients (per person)
1 Salmon Fillet
1 sheet of puff pastry
2 teaspoons of pesto
1 tomato sliced
1 egg
Cut your pastry in half and add the pesto to one part leaving a border of about 2 cm.
Place the fillet on top of the pest and add a bit of salt and pep.
Place the sliced tomatoes on top of the salmon and then drape the other half of the pastry over the top of it.
Press the two pieces of pastry together to make a sealed parcel. Brush with egg and score the top of the pastry into a fancy design.
Place into over at 200 degrees for 20 -25 minutes.
I served ours with a chilli lime coleslaw.
