1 cup sugar
1 egg
125g butter (room temperature or softer is best)
1 cup mashed bananas (I used 2)
1tbs milk
2 cups of flour, sieved - use plain or wholemeal flour
1tsp baking powder
1/2 tsp bicarbonate of soda
Preheat oven to 180 degrees.
Cream sugar butter and egg so it becomes smooth. Mash the banana and add in the milk, add to the mixture.
Sift the flour, baking powder and bicarbonate of soda into the mixture and fold to combine. Make sure it is well combined and no lumps of flour remain.
Prepare a loaf tin with baking paper to stop it from sticking, pour in the mixture.
Pop in the oven and cook for 55 minutes, take out and test with a knife, if it comes away clean it's cooked, if not pop it back in the oven for a few minutes and test again. If the bread is getting too brown cover with foil before putting it back in.
Once cooked turn out onto a rack to cool down.
Notes
Next time I make this I will add in 1/2 cup of chopped walnuts to give it a different texture. It also freezes well, leave to cool, cut into slices and wrap each one in baking paper before putting into the freezer.
