This recipe is super fast and can be prepped in advance and left in the fridge for the right moment to cook it up, and, it's a weight watchers recipe so it's pretty healthy!
Ingredients
500g chicken breast
1 tbsp chinese 5 spice
1 bunch broccolini (baby broccoli)
200g snow peas
1/4 cup hoisin sauce
1/4 cup chicken stock
1 packet of soft noodles (I use Singapore noodles)
Cut the chicken into strips and place in a bowl, sprinkle over the 5 spice and mix to coat the chicken.
Top and tail the snow peas and clean the broccoli, trimming any parts that need it.
Prep the noodles as per instructions on the packet.
Add the chicken to a hot wok and stir fry until almost cooked (2-3 minutes), add veggies and sauce and stir fry for a further 4- 5 minutes.
Add in the noodles and warm through.
Nom, nom, nom!

Notes
You can add any veg you want, baby corn, mushrooms or capsicum (peppers) would be lovely in this as well.
I use chicken tenders instead of the chicken breast, either works well in this recipe.
