My brother gave me this recipe years ago and it get's pulled out fairly regularly as a midweek favourite. You can serve these bad boys up with loads of different things, mash, sweet potatoes, rice or whatever takes your fancy.
Ingredients
500g pork mince
1/2 tin anchovies finely chopped - don't let these put you off, try them in this you don't taste them but they give a richness
Zest of 1 lemon
good handful of grated parmesan
3 slices smoked bacon, fat removed and finely diced
salt and pepper to taste
Add all the ingredients together in a bowl and combine well. Form into whatever size of patties you feel like. Heat a frying pan (or grill if you prefer) cook until brown on each side, turning occasionally.
Serves 2 or 3 depending how greedy you are!
