Winter has finally arrived in Sydney which means nice hearty food to keep you warm and fill your belly. This recipe is a great one to try, it's tasty and it's a one pot wonder so you don't need to bother with loads of pots and pans! The most important thing with this is to find some really great sausages as they give most of the flavour to the dish. I used toulouse sausages, but if I was in the UK I would use cumberland for the taste.
You also need to soak your lentils before you use them, best to pop them in water the night before you are going to cook this up.
Ingredients
6 Sausages
1 onion finely chopped
1 tin chopped tomatoes
5 good handfulls of green lentils
Soak your lentils overnight to help soften them, drain and leave to one side. If you have a heavy dish that can go on the cooker top as well as the oven use this to brown your sausages and cook the onions a little, if not just use a frying pan and transfer to an oven dish.
Once you have browned the sausages add the lentils and tomatoes. Put lid on your dish and put in the oven at 180 for about 45 mins to an hour. Half way through take out and stir the mixture. The dish is cooked when the lentils are soft.
